Banana Pineapple Bundt Cake

This is a favorite in my house.  Perfect with a cup of hot chocolate or coffee on a chilly morning.  The recipe works great with a sugar substitute like Splenda or Wheylow White. I have even made it with half white flour and half whole wheat flour and had it turn out great!  This cake is very rich so you don't need a large piece to feel satisfied.

I love to bake this cake in my Nesco Roaster.  It turns out extremely moist this way but does not brown on the top. If you like your cakes browned/golden, use your conventional oven.

Bake at 350* for 1 hour and 15 minutes.  Insert toothpick or clean knife to test doneness.  If it comes out clean, cake is done.

Preheat oven 350*

Mix in Bowl:
3 cups flour
1 tsp salt
1 tsp baking soda
1 1/2 cups sugar (may use 2 cups, depending on your taste)

Mix in Another Bowl:
1 can crushed pineapple
1 1/2 tsp oil (I like to use olive oil)
3 large eggs
3 bananas, mashed

Optional: 1 cup Pecans or Walnuts

Grease bundt pan.
Sift dry ingredients together. Add wet ingredients and mix well.  I use the whisk attachment on my Kitchen Aid.
Pour into bundt pan.
Bake

Tip: When adding fruit or nuts to a recipe, lightly coat with flour before adding to batter.  This helps prevent them from settling to the bottom of the pan.

Mom's Soft Chocolate Chip Cookies

I have several CC Cookie recipes but this is the favorite amongst my family.  The recipe makes soft cookies with a slightly crispy outer layer and just sweet enough to satisfy your cravings.  Melt in your mouth delicious!

Preheat oven at 350 Degrees F. 

In bowl, mix:
1 cup butter
3/4 cup White Sugar or Substitute
3/4 cup Brown Sugar or Substitute

Beat in:
2 eggs
3 TBSP Hot Water
1 tsp Vanilla Extract
1 tsp Baking Soda
1tsp Salt

Remove from blender and stir in by hand until mixed completely:
3 cups All Purpose Flour

Fold in:
 6-12oz Chocolate Chips (vary the amount, depending on how chocolatey you want your cookies)

Bake cookies for 10-12 minutes or until lightly browned. I find that these cookies, in my oven, come out perfect after 11 minutes.

Notes:

-You can do this, too! Go to the Target Coupon Generator and print off coupons for the above items. You can choose the amount of coupons you want.

-Artisan coupons are worth $1 but the bread is priced at $.99 so you will have to inform the cashier that she/he might have to adjust the coupon to $.98. In my case, the register accepted the coupons as is. Also, the bread you want is the "petite" baguette or Ciabatta (pronounced chibatta) bread. Ask the baker for some if you can't find it on the shelves. That's what I did and she couldn't stop thanking me for showing her the deal with the coupon LOL

-The apples must be bagged separately. 3 small apples is a couple of ounces over 1lb. Have the cashier weigh each bag individually or the register will not accept all of the coupons.

-The Cheerios coupons are not size-specific so you can easily get the individual servings free.

-Last but certainly most important; Be courteous. Warn the people behind you that you have coupons and might take longer than average. They will love you for warning them and just might learn something The woman behind me couldn't believe what I paid for all of this stuff!

I've been pretty bad at not using coupons to shop with for the past few months. Now, with dh's salary cut in half, I am making it my mission to shop for as much as possible to sustain our family of 5, for little or no money out of pocket.
